The Wedge Co-op has been a feature of its South Minneapolis neighborhood since it started in 1974 on Franklin Avenue, in the basement of an apartment building just up the hill from Lyndale Avenue. A group of neighbors met that summer to organize a cooperative store to provide themselves with whole and natural foods, preferably in bulk quantities to save money.

The St. Peter Food Co-op has a colorful and unique history which begins in the spring of 1979. At that time, an ad in the St. Peter Herald announced a meeting for those interested in starting a co-op store. The group decided to rent the only available space in town – a small storefront on the corner of Front Street and Broadway Avenue in St. Peter. When the co-op opened its doors in July 1979, its membership had already grown to 60. The co-op’s early inventory consisted mostly of bulk items, including beans, grains, flours, dried fruits and nuts, and occasional local produce.
The first organizing meeting was held October 9, 1978, in the Community Hall at the Hastings Library. It was open to anyone interested in becoming a member and helping start up the co-op. There were 75 people who attended, with 66 of them who signed up to help.
Seward Co-op opened in 1972 on the corner of 22nd and Franklin avenues. In the beginning the co-op was run by a core group of volunteers and had a small selection of products with a heavy emphasis on bulk goods.
